Potato Salad

Ingredients

  • 2 potatoes per person + 1
  • 1 hard-boiled egg per person + 1, chopped
  • 1-2 pickles per person (depending on size of pickle), finely chopped
  • mayo
  • mustard
  • onion salt to taste
  • garlic salt to taste
  • black pepper to taste

Directions

  1. Completely peel potatoes and cube
  2. Boil potatoes for about 6-7 minutes (until just done) 
  3. Drain potatoes and put in large bowl
  4. Sprinkle potatoes with garlic salt, onion salt, and black pepper
  5. Add pickles & egg to potatoes
  6. Add small amount of mustard, just enough for color
  7. Add 1-2 tbsp mayo, depending on how many potatoes – you want just enough to hold mixture together
  8. Stir mixture well, adding more salt & pepper as desired
  9. Chill for at least 2 hours prior to serving
