Chicken and Rice Casserole

Ingredients

  • 1.5 lbs boneless, skinless chicken breast tenders
  • 2 cups instant rice
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can evaporated milk
  • 1/2 cup water
  • 1 package mild shredded cheddar cheese (optional)
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350°
  2. Mix rice, soups, evaporated milk, water, and cheese (if applicable) together in large bowl 
  3. Spread chicken in bottom of 9×13 casserole dish and season with salt/pepper
  4. Pour all ingredients on top of chicken
  5. Cover with aluminum foil
  6. Bake for 1 hour or until rice is tender & chicken is cooked through
